Vegetable Wraps Recipe:

Vegetable Wraps Recipe is a nutritious, healthy, and a low carb recipe. It makes a great healthy snack which is delicious, tasty, and full of flavor.

Ingredients:
For the sauce:
1 tablespoon soy sauce
¼ teaspoon crushed or grated fresh ginger
1 tablespoon lemon juice
Crushed red pepper
1 small clove garlic, minced
For the filling:
50 gm dried brown rice vermicelli noodles
10 8-inch brown rice paper wrappers or any other wrappers
2 tablespoon olive oil
1 onion finely chopped
10 to 15 sprigs fresh herbs (parsley, basil, etc.)
10 6-inch very thin asparagus spears, if available
1 cup peeled and shredded fresh beetroot
2 (1 cup) carrots, cut into thin strips
¼ (1 cup) cabbage cut into thin long slices
1 avocado, peeled, seeded, and cut into 10 slices.

Method:
For the sauce:
In a small bowl combine all the ingredients for the sauce and add 2 tablespoon water. The sauce is ready.

For the filling:
Prepare noodles as per the directions on the package, then drain. Rinse under cold water and drain the water properly.
Heat a pan and put 2 tablespoon olive oil and add onion to it. Once it is light pink add the rest of the ingredients.
Pour warm water into a pie plate. Carefully dip a rice paper wrapper into the water; transfer to a clean work surface. Let it stand for some time for it to soften. Instead of rice wrappers, you could also use chappati or lacha parantha made out of flour. These can be prepared earlier and kept aside.
Divide the cooked ingredients in the pan into 10 portions. Place them on each wrapper. Fold the bottom edge of the wrapper over the filling and tuck it under on the other side while pulling the roll toward you. Fold in sides to seal in filling. Continue rolling tightly. Repeat with the remaining wrappers. Serve with the prepared sauce or you could also try it with green chili sauce or tomato ketchup.
