Thai Butternut Curry Recipe:
Thai Butternut Curry recipe is a balanced, spicy, delicious and vegetarian dish and is great for any meal. Prepared with simple and readily available ingredients, this curry is favorite of many in India, especially in winters. This healthy curry is a good combination with a variety of rice.

Thai Butternut Curry recipe has a delightful taste and makes a great meal. Due to the ingredients used it is also called butternut squash Thai green curry or Thai butternut squash curry soup. If using red paprika it gives a red colour to the curry and is famous as red curry squash. Whatever the variety people simply love it. Due to the ingredients it can have red, yellow or even light and creamy colour.

Thai Butternut Curry recipe also has good health benefits and is quite nutritious. It can be served with rice but you can also eat it with any breads of your choice.

Ingredients:
500 gm butternut squash, peeled and pitted
400 gm tin of chickpeas, drained and washed
2 medium onion, finely chopped
400 gm tin of coconut milk
1 red pepper, de-seeded and finely chopped
2 teaspoon ginger-garlic paste
1 tablespoon oil
2 teaspoon paprika, to taste
1 teaspoon of turmeric powder
1/2 teaspoon cumin powder
1 teaspoon coriander powder
Salt to taste
1 tablespoon lemon juice
10 sprigs of fresh coriander, chopped

Method:
Cut butternut squash into 1 inch pieces.
Heat the oil in a pan.
Add the garlic, ginger and onions
Sauté until the onions are golden brown.
Add butternut squash, chickpeas, red pepper, paprika, turmeric, coriander, cumin and 2 cups of water.
Simmer for 20 minutes.
Add coconut milk and bring to a boil.
Add lemon juice and coriander leaves.
Serve with stream rice or fried rice.

Preparation time: 15 minutes
Cooking time: 30 minutes
Total Time: 45 minutes
