Roasted Potatoes Recipe:

Roasted potatoes recipe is a great side dish that can go with anything. It is an energy booster. You could add any dressings or herbs of your choice to the recipe. Even instead of olive oil, you could use rapeseed oil or any other oil of your choice. You could also add carrots or any other vegetable of your choice. Depending on the vegetable cooking time may vary.

Ingredients:
2 kg potatoes
5 garlic cloves crushed and finely minced
4 tablespoons olive oil
3 teaspoons lemon juice
½ teaspoon rosemary or parsley
Finely-chopped coriander (Optional)
Salt to taste
Freshly ground pepper

Method
1. Heat oven to 400°. Grease a large shallow baking dish with olive oil.
2. Peel the potatoes although you could bake them unpeeled as well, it’s your choice. Cut them into half.
3. Boil the potatoes for 10-15 minutes.
4. In a large bowl, combine the crushed garlic, olive oil, lemon juice, rosemary/parsley(finely chopped), pepper, and salt.
5. Toss potatoes with the mixture.
6. Arrange the coated potatoes in a single layer in the prepared pan.
7. Bake for 25 to 35 minutes, or until potatoes are tender.
8. Once they are ready you can garnish with finely-chopped coriander.
