Rasmalai Recipe – Rasmalai is a popular Bengali sweet delicacy made with Indian cottage cheese or chenna (paneer) discs in dry fruit laced saffron flavored creamy milk rabri which you can prepare anytime and treat your loved ones with this homemade sweet.

Ingredients:
Chena Balls:
Milk 1 litre
Vinegar 2tabsp
Sugar 1 cup
Water 2 cups
For Ras (thickened milk):
Milk 1 litre
Sugar 1 cup
Green cardamom powder 1 teaspoon
Chopped almonds, pistachio, cashew nuts
Saffron 10-15 strands dipped in 1/2 cup of milk
Method:
First boil milk in a pan. Take vinegar in a cup add 1/4 cup of water to it. Slowly add this mixture to boiling milk. milk will curdle. Drain the curdled milk in a muslin cloth and hang it to drain water from it. Allow it to cool down. Now knead this chena/paneer for at least 10-15 min. or until this becomes smooth. Now make small balls of it.
On the other pan take 1 cup of sugar and add 2 cups of water and start boiling it. Once this sugar syrup boils add the chena balls to it and cook it for 15 -20 min covering the pan.
For making the ras (syrup) boil the other litre of milk. Add the cardamom powder and finely chopped dry fruits and saffron water to it. Boil the milk till 2/3 of it remains.
Add the chena balls to this reduced milk. Rasmalai is ready to serve. Garnish with chopped pistachio and serve chilled.
