One cup semolina (rava/sooji)
2 tablespoon wheat flour
1 cup curd
1/2 tablespoon baking soda, optional

Roast semolina for 2-3 minutes and grind them. Keep aside.
Take a bowl and mix beaten rice powder, semolina powder, wheat flour, baking soda and salt.
Add curd and mix well
Add water to make batter a flowing paste (thick viscous).
Keep for 5 minutes.
Add more water if the batter is too thick.
For Dosa:
1. Take a large non-stick griddle/tava on a medium flame, apply one teaspoon oil and heat it.
2. Pour ½ cup batter on the pan and spread it using a flat-bottom bowl or ladle. Fill any large holes using a little bit of batter.
3. Pour a little oil on the outside of the dosa. Cover it with a lid.
4. Once the edges start getting brown use a sharp edged spatula to detach dosa from the pan.
5. Turn dosa upside down and cook the other side. If the dosa is too thin, you can skip this step.
6. Remove and plate it.
7. Make more dosas with the rest of the batter.
