Ingredients: 100 gm of red or yellow lentils 1 medium tomato, diced 1 medium onion, sliced 1 medium carrots, sliced 100 gm pumpkin, diced 100 gm mushroom, sliced 50 gm cauliflower, diced 5 leaves of basil 5 leaves of oregano
Method: Add all the ingredients and 3 cups of water to a pan. Cover and simmer for 30 minutes until the lentils are soft. Garnish with salt and pepper and serve.
