Grilled Bread with florets and carrot fingers Recipe is a nutritious, healthy, and delicious dish. It is very simple and fast to cook. There can be variations to it depending on the ingredients you have in hand.

Ingredients:
1 cauliflower with small florets, cut and keep aside
½ capsicum sliced into small cubes or cut into thin juliennes
3 carrots cut into long and thin slices
2 tablespoon olive oil
Salt to taste
Avocado Dressing
2 tablespoon lemon juice
6 pieces of bread or bun or pita bread, toasted
Hot sauce, for serving

Method:
In a large pan put 1 tablespoon olive oil and put the cauliflower florets. After 4 to 5 minutes add the capsicum to it. Add some lemon juice, salt, and pepper to taste. Let it cook for 4 to 5 minutes.
In another pan take 1 tablespoon olive oil and add the carrots. Saute till they are golden brown. Then add salt and pepper to taste.
To give final touches heat oven to 400°. Grease a large shallow baking dish with olive oil. Separately empty contents from both the pans and bake for 5 to 7 minutes.
In the meantime, coat the toasted bread with avocado dressing. On each toast add the mixture and cover it with another piece of toasted bread.
The carrot once done can be plated, and garnished with parsley or coriander.
