CREAM OF POTATO SOUP RECIPE

Cream of Potato Soup Recipe:
Cream of Potato Soup recipe is a fulfilling, creamy and delicious soup. This thick soup or cream soup is made with limited ingredients and easy steps so that it can be tried at home. In this Cream of Potato Soup Recipe, the preparation is started from scratch, without any broth etc. For a variety, instead of milk/water you can add vegetable broth, lentil broth, chicken broth etc. Try adding chunks of chicken, ham, etc. Try to avoid any vegetables like carrots or spinach as they will give color to this creamy soup.

CREAM OF POTATO SOUP RECIPE is a tasty, creamy, aromatic, very easy and quick to make. A must try at home soup, flavourful and simple recipe.

Ingredients:
4 potatoes, peeled, cubed
1/2 onion, chopped
2 stalks celery, finely julienne
½ cup cream
2 cup milk
3 cloves garlic, crushed
2 tablespoon butter
Salt to taste
black pepper ground, to taste, to garnish
8 fresh coriander leaves, to garnish

Method:
Heat butter in a pan.
Add garlic cloves, onions, celery. Sauté for about 5 minutes till onions become translucent.
Add potatoes, salt and milk.
Boil for 15-20 minutes until they become tender.
Add cream, mix well and turn off the heat.
Let it cool down a little to grind. Move all to a grinder. Make a smooth paste.
Instead of above step, use potato masher to coarsely crush vegetables leaving some chunks behind.
Mix a little more milk if the paste is too thick.
Move to serving soup bowls and garnish with ground black pepper and coriander leaves.
Serve hot with croutons, pieces of bread or slices toast.
