1 cup boneless chicken, cubed in 1/2 inch pieces
2 celery sticks, brunoise
1 onion, finely chopped
½ cup cream
3 cloves garlic
2 tablespoon olive oil
Salt to taste

8 fresh basil leaves, to garnish

Method:
Heat oil in pan and sauté garlic and onion till onions become translucent.
Add chicken, celery, salt and 2 cups of water.
Cover and boil for 60-90 minutes. Add a little more water if needed, till chicken becomes shredded.
Mix cream and cook for 2 minutes.
Move to serving soup bowls and garnish with ground black pepper and basil leaves.
Serve hot with croutons, pieces of bread or slices toast.
