Ingredients: 250 gms chicken 200 gm basmati rice 5 foot long bamboo sticks 100 gm curd 1 medium onion 1 inch ginger 5 cloves of garlic 1 lemon Pinch of saffron 2 bay leaves 4 cloves 1 teaspoon biryani masala 1 teaspoon pepper powder 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon coriander seeds powder 1 teaspoon cumin seeds 2 Green chillies 10-15 Coriander leaves 10-15 Mint leaves 2 tablespoon oil
Method: Slice and fry onion till they become golden brown. Mix cloves, bay leaves, salt, turmeric powder, red chili powder, biryani masala, chopped ginger, chopped garlic, coriander leaves, onions, half a lemon, curd, mint leaves, coriander leaves, green chillies and oil and make a paste. Take chicken into a mixing bowl. Add half of the spice paste to it and mix well. Leave it to marinade for an hour. Take raw basmati rice into another mixing bowl. Add rest of the spice paste and mix well. Keep it aside for an hour to marinate.
Method: Filling: 1.Clean all the dust from in and out of bamboo. 2.Use a little oil to grease the inner part. 3.Put 2 tablespoon of chicken and then 4 to 5 spoons of rice. Repeat the process. 4.Add water till it runs down to the bottom through the gaps. 5.Wrap bamboo with aluminum foil.
Cooking: 1.Set fire and put the bamboos on it. 2.Keep churning frequently and cook for 40-50 minutes. 3.Remove it from fire and leave for 5 minutes. 4.Serve hot with curd or raita.
