Ingredients:
500 gm single pomfret
100 gm set curd
50 gm fresh cream
1 tablespoon olive oil
2 tablespoon lemon juice
1 teaspoon ginger garlic paste
1 teaspoon onion, crushed
1 teaspoon mint, crushed
1 teaspoon dried oregano
1 teaspoon black pepper powder
1 teaspoon red chilli powder
5 coriander springs
Salt to taste
1 small onion, sliced to garnish
Method:
Make some slits in pomfret.
Marinate the pomfret with 1 tablespoon lemon juice, ginger garlic paste and salt for 15-20 minutes.
Mix curd, cream, onion, mint, oregano, pepper, chilli and salt to make a paste.
Coat the paste over both sides of the pomfret.
Skewer the pomfret.
Preheat an oven at 200°C.
Grill the fish turning the side after every 5 minutes and occasionally coat with olive oil and lemon juice.
Grill for about 30 minutes until the coating becomes dark.
Remove skewers and garnish with onions.
Serve with mint chutney.
