6 chicken breasts
2 tablespoons of all-purpose flour
1 ½ cups of grated low-fat Cheddar cheese
3 tablespoons unsalted butter
2 tablespoons of fresh chives, finely chopped or dried chives
2 tablespoons of low-fat milk
2 tablespoons of mustard
1 tablespoon garlic powder
Salt and black pepper to taste
Preheat the oven to 180°C / 350°F
Season chicken breasts with salt and pepper and place in a baking dish. Cover with aluminum foil, place in oven and bake for 20 minutes.
On a plate combine the cheese, flour, black pepper, garlic powder, and chives.
Mix the milk and mustard in a bowl.
In a large saucepan, melt butter over medium heat and whisk in the mixture of flour, cheese, black pepper, garlic, and chives. Keep stirring and when it is golden brown add in milk and mustard mix and bring the mixture to a boil. Reduce heat to low and let the sauce simmer for 4-5 minutes.
Remove chicken from oven and evenly pour the sauce over the top. Return to oven and bake for another 25-30 minutes, or until chicken is cooked. Remove from oven, serve hot and enjoy!
