Baked and stuffed fish:

Baked and stuffed fish: This dish is a delight for the fish lovers. It is easy to cook, is packed with flavor, is so delicious and is a great recipe. Fresh fish is ideal for baking, which is stuffed with fresh vegetables that are seasoned with lemon juice or orange zest. You could also use soy sauce. A must try!

 

 

INGREDIENTS:
8 small fillets of fish
1 onion, finely chopped
Salt and pepper to taste
1 teaspoon of olive oil
1/2 tablespoon butter , melted
1 tablespoon of fresh parsley, finely chopped
2 tablespoons diced onions
1 clove garlic , minced
½ cup finely diced carrot
½ cup finely diced beans
1 lemon, cut into wedges – some for lemon juice (or grated rind) and some to serve with fish

METHOD:
1. Preheat the oven to 180°C / 350°F.
2. Rinse the fish under cold running water and remove any bones. Dry in kitchen paper. Sprinkle fish fillet with salt and pepper and set aside.
3. Heat oil in a pan on medium heat. Add garlic, onions and all vegetables, celery and saute until the vegetables ae soft. Remove from the heat and stir in the parsley.
4. Spread the mixture over the fish fillet, add lemon juice or rind and roll it up, and fasten with a toothpick.
5. Add a little of the melted butter to a small baking dish and swirl it so that the butter coats the bottom of the dish. Add the fish. Pour the remaining butter over the fish. Cover with foil.
6. Bake for 20–30 minutes, depending on size and thickness of the fish.
7. Lift the fish carefully on to a warmed serving dish and surround with cooked peas, lemon wedges and parsley.
8. You can serve with vegetables of your choice, for example, chopped carrots, peas or broccoli.
