Aam Ka Achaar Recipe:
This Aam Ka Achaar Recipe or mango pickle recipe of north India is household favorite and accompanies almost every meal. You can prepare this aromatic, spicy, not as hot, and tangy accompaniment easily at home with this recipe.
It goes well with chole bhature, kulcha, roti, paratha and rice based main course.




Ingredients:
6 cup raw mango, pitted, chopped
4 tablespoon onion seeds (kalonji)
4 tablespoon gram fennel seeds (saunf)
4 tablespoon fenugreek seeds (methi dana)
3 tablespoon red chilli powder
3 tablespoon black peppercorns
3 tablespoon turmeric powder
1 cup salt
3 cup mustard oil
Method:
1.Dry mangoes on low flame (or in sun for a day).
2.Mix half a cup of oil with onion seed, fennel, fenugreek, chilli, pepper, turmeric and salt make a course paste.
3.Put mangoes and half a cup of paste and mix well.
4.Layer a little paste in a jar with relatively narrow opening.
5.Layer one fourth of coated mangoes in the jar and sprinkle more paste to make a layer.
6.Continue layering mangoes and paste till they are exhausted.
7.Slowly pour oil in the jar until the layered contents are submerged.
8.Tie muslin over the opening of the jar and keep the jar in the sun, stirring it softly twice a day for about 7 days.
9.Serve with your favorite main course or snacks.
