5 EASY VEG BAKED SAMOSA RECIPE:

There can be variations of different fillings like potato, banana, peas, papaya and Paneer. This unconventional baked recipe is very fulfilling, traditional and aromatic and yet savvy. You can serve an assortment of samosa for the consumer to solve the mystery of preparation. We can also make chaat of samosa by crack opening it and then garnish it with Pindi chole, mint chutney and tamarind chutney (recipe uploaded for each one).

Ingredients:
For Potato Filling:
1 medium onion, finely chopped
One teaspoon ginger, finely chopped
1 teaspoon green chilli, finely sliced
2 boiled potato
1 tablespoon refined oil
One teaspoon cumin seeds
Salt to taste

For Paneer Filling:
1.5 cup Paneer, crushed
1 tomato, finely chopped
4 tablespoon onion, finely chopped
1 teaspoon ginger, finely chopped
One teaspoon mustard seeds
2 teaspoon green chilli, finely sliced, to taste
1 tablespoon oil
One teaspoon cumin seeds
Salt to taste

For Mattar Filling:
1 cup boiled peas
2 tablespoon potato, boiled, peeled, crushed
3 tablespoon onion, finely chopped
1 teaspoon ginger, finely chopped
2 teaspoon green chilli, finely sliced, to taste
1 tablespoon oil
One teaspoon cumin seeds
Salt to taste

For Banana Filling:
1 medium onion, finely chopped
One teaspoon ginger, finey chopped
10 fresh coriandleaveser, chopped
1 teaspoon green chilli, finely sliced
One raw banana, chopped into small cubes
1 teaspoon curry powder
One tablespoon refined oil
1 teaspoon mustard seeds
Salt to taste

For Papaya Filling:
1 cup raw papaya, peeled, de-seeded, grated
One potato, boiled, peeled, crushed
3 tablespoon onion, finely chopped
1 teaspoon ginger, finely chopped
2 teaspoon green chilli, finely sliced, to taste
One tablespoon oil
1 teaspoon cumin seeds
Salt to taste

For Shell:
500 gm all purpose flour (maida)
2 tablespoon gram flour (besan)
3 teaspoon ajwain
2 tablespoon ghee
oil (for deep frying), optional
Salt to taste

Method:
For Potato Filling:
1. Heat the oil in a pan and add the cumin seeds.
2. Add onion, ginger & chillies. Cook until it turn golden brown.
3. Mix with mashed potatoes and salt.
4. After cooking let this filling cool a little.

For Paneer Filling:
1. Heat the oil in a pan and add mustard seeds and cumin seeds.
2. Add onion, ginger & chillies. Cook until it turn golden brown.
3. Mix crushed paneer and salt.
4. Let this filling cool a little.

For Matter Filling:
1. Heat the oil in a pan and add the cumin seeds.
2. Add onion, ginger & chillies. Cook until it turn golden brown.
3. Mix with boiled peas, boiled potatoes and salt.
4. After cooking for 2-3 minutes and let this filling cool a little.

For Banana Filling:
1. Heat the oil in a pan and crackle the mustard seeds.
2. Add onion, ginger & chillies. Cook until it turn golden brown.
3. Mix with raw banana, salt, curry powder & fresh coriander.
4. Let it cook on low flame till banana is soft. Keep stirring regularly this dry filling.
5. After cooking let it cool a little.

For Papaya Filling:
1. Heat the oil in a pan and add cumin seeds.
2. Add onion, ginger & chillies. Cook until it turn golden brown.
3. Mix grated raw papaya and salt.
4. Sauté for 6-7 minutes until it becomes dry and tender.
5. Mix boiled potato and make a smooth mixture.
6. Let this filling cool a little.

For the Shells:
1. Sieve all purpose flour and gram flour into a bowl.
2. Mix ajwain and ghee in the flour. Add water little by little and knead it well until the dough is tight.
3. Cover and keep it to cool for fifteen minutes.
4. Roll out dough into flat discs of 3-4 inches in diameter. Cut them into half.
5. Fold each piece to make a cone. Seal the folding edge with little water
6. Put a different filling in the center of different cones
7. Seal the cone with a little water on its edge.
8. Put the cones on a non-stick baking tray. You can rub little oil on the samosas for baking.
9. Bake for 15 to 20 minutes on medium temperature (200 degree Celcius) until they turn golden brown.
10. Serve hot with ketchup or tamarind chutney.
