INGREDIENTS:
16 chicken drumsticks
For the marinade:
2 tablespoon of tomato puree
2 tablespoon of soy sauce
1 tablespoon of vinegar
1 tablespoon of honey
1 tablespoon of wholegrain mustard
1 orange juice and zest
Salt to taste
Black pepper to taste

METHOD:
1. Take a large bowl and mix all the marinade ingredients together.
2. Place the chicken drumsticks into the bowl and stir around until all the drumsticks are coated with the sauce.
3. Cover the bowl with cling film and place on the bottom shelf of the fridge to marinate for at least a couple of hours
4. Light the barbeque or preheat the oven to 200°C / 400°F.
5. Cook the chicken for at least 30 minutes turning regularly making sure that the chicken cooks evenly on all sides
6. Before serving, check that the chicken is properly cooked by removing it from the heat and cutting into the thickest part of it with a clean knife to ensure that it is piping hot all the way through and there is no pink meat remaining and the juices run clear.
7. Serve with mint chutney or dressing.

INGREDIENTS:
20 ml of olive oil or rapeseed oil
1 onion, cut into wedges
1 red and 1 yellow pepper, sliced
3 cloves of garlic, crushed
1 teaspoon vinegar
Tomatoes pureed
pepper and salt
200 g pasta
Grated cheese
1 cup milk
1 tablespoon all-purpose flower

METHOD:
1. Preheat the oven to 160°C / 325°F.
2. Take a pan and heat some oil and place all the sliced vegetables into it.
3. Put the vinegar and the salt, and pepper and let it cook until the vegetables are soft and golden brown.
4. In another pan let us prepare the sauce. To 1 teaspoon olive oil add garlic and flour and saute. Then add milk and bring to boil. Now add tomato puree to this mixture and bring to a boil.
5. Cook the pasta in boiling water for 12–15 minutes until it is soft. Drain the pasta and add pasta, vegetables and the sauce together in the pan.
7. Stir and cook gently for 2–3 minutes or until it simmers.
8. Transfer it to a baking dish, sprinkle the cheese over the pasta and put in the oven for 4-5 minutes and serve hot.

Ingredients:
Chena Balls:
Milk 1 litre
Vinegar 2tabsp
Sugar 1 cup
Water 2 cups
For Ras (thickened milk):
Milk 1 litre
Sugar 1 cup
Green cardamom powder 1 teaspoon
Chopped almonds, pistachio, cashew nuts
Saffron 10-15 strands dipped in 1/2 cup of milk

Method:
First boil milk in a pan. Take vinegar in a cup add 1/4 cup of water to it. Slowly add this mixture to boiling milk. milk will curdle. Drain the curdled milk in a muslin cloth and hang it to drain water from it. Allow it to cool down. Now knead this chena/paneer for at least 10-15 min. or until this becomes smooth. Now make small balls of it.
On the other pan take 1 cup of sugar and add 2 cups of water and start boiling it. Once this sugar syrup boils add the chena balls to it and cook it for 15 -20 min covering the pan.
For making the ras (syrup) boil the other litre of milk. Add the cardamom powder and finely chopped dry fruits and saffron water to it. Boil the milk till 2/3 of it remains.
Add the chena balls to this reduced milk. Rasmalai is ready to serve. Garnish with chopped pistachio and serve chilled.
